Overview
The Food Processing and Nutrition RG is dedicated to the development of personalized foods and sustainable packaging. We are looking for a qualified Junior Research Fellow to join our team in the development and characterization of encapsulation systems under the project Yottocann.
Job Duties
The job duties will be the following:
- Work on a national project at INL in the food area;
- Development and characterisation of encapsulation systems for food applications;
- Assessment of the stability, efficacy (in vitro digestion) and safety (cell-based in vitro models) of the developed nanosystem;
- Perform the required experiments and write technical reports;
- Work in a cross-functional team and with other groups.
Mandatory Qualifications
Education
- MSc Degree in Chemical and Biological Engineering, Biotechnology, Biochemistry, Bioengineering, Nanotechnology or other related fields.
Experience
- Use of food ingredients for the development of encapsulation systems using spray drier, high energy and low emulsification techniques;
- Development of food products using natural ingredients;
- Physical and chemical characterisation techniques of encapsulation systems and food products;
- Cell culture and related techniques.
Technical Skills
- Development, production and characterisation of emulsions and nanoemulsions (and solid lipid nanoparticles, nanostructured lipid carriers) using food grade materials for the encapsulation of bioactive compounds (hydrophobic), by using high energy methodologies;
- Production of encapsulation systems using food grade materials for encapsulation of bioactive compounds (both hydrophobic and hydrophilic) using spray dryer;
- Experience in nano-characterisation techniques, such as DLS, NTA, XRD, UV-Vis;
- Experience in in vitro digestion of food formulations;
- Experience in cell culture for the assessment of cytotoxicity (cell viability and oxidative stress) and barrier and permeability studies;
- Analytical techniques (HPLC, fluorescence spectroscopy) and confocal laser microscopy.
Other Skills
- Knowledge of food regulations;
- Experience in product development.

How the Selection Process works
A. Applications eligibility check
