OFFER DESCRIPTION

The project focuses on the development and application of analytical methods by using high performance liquid chromatography (HPLC)and/or gas chromatography (GC) coupled with mass spectrometers (single quadrupole, ion trap and triple quadrupole) aimed at the separation and simultaneous quantification of contaminants and/or bioactive compounds in food and plants of food interest.Among contaminants, of particular interest are both drug residues (benzimidazoles, pesticides, etc),residues unintentionally introduced into the food (ink photoinitiators, etc) and toxic substances naturally produced by plants as a defense mechanism (glycoalkaloids, etc).Among the bioactive compounds, particularly interesting are polyphenols, molecules with antioxidant activity present in numerous foods and plants of food interest (legumes, coffee, hypericum, and so on),soyasaponins (molecules with strong cholesterol-lowering activity)and also vitamins and fatty acids
